Chocolate Covered Brownies











INGREDIENTS: 


* 3/4 cup sugar
* 1/3 cup butter
* 2 Tbsp water
* 4 cups semisweet chocolate chips
* 1 tsp vanilla
* 2 eggs
* 3/4 cup flour
* 1/2 tsp salt
* 1/4 tsp baking soda
* 2 tbsp shortening
* 1/4 cup chopped almonds




HOW TO MAKE:


In a small saucepan, heat sugar, butter and water until boiling. Remove from heat. Stir in 1 cup of chocolate chips and vanilla until melted. Add in eggs one at a time (mixing fully after each one). Add flour, salt and baking soda to chocolate mixture. Add in one more cup of chocolate chips (these shouldn't melt). Pour into a greased 8x8 inch pan and bake at 325 degrees for 35 minutes. Remove from oven once middle is set and cool completely. Place pan into freezer until brownies are hardened (about an hour or more if needed).

Once the brownies are hardened, cut into 2 inch squares and place on a baking sheet that is lined with parchment paper.

Heat remaining 2 cups of chocolate chips and shortening in a small saucepan until melted. Carefully dip brownie squares into chocolate until fully coated **easiest way for me is to place the brownie on a fork and spoon chocolate over. This gets the best chocolate coating without making the brownies fall apart**

Place chocolate coated brownies back into parchment paper and sprinkle with nuts. Refrigerate 30 minutes or until chocolate is hardened.


I loooooove this recipe. Not only is it amazing that the brownies are made from scratch, the chocolate coating makes it so rich and delicious!!! I've made this recipe more times than I can count over the last 8 years or so and it's always been a hit. The first few times are intimidating but it's worth it!!! Just make sure your brownies are completely hardened before dipping. Enjoy!!
